Sourdough Waffles or Pancakes + Variations

If your starter jar is getting too full, it's time to discard some. What to do with that excess starter? Don't throw it away - make some tangy, delicious pancakes or waffles! These breakfast treats are sure to be a new favorite in your home.
Ingredients
1 cup buttermilk
1/2 cup sourdough starter discard
1 egg
1/4 tsp vanilla extract
1/2 tsp salt
1/2 tsp baking soda
1 tbsp sugar
1 cup all-purpose white flour
2 tbsp butter, melted
Optional: dash of cinnamon
Directions
In a large mixing bowl, combine the starter and buttermilk. Whisk in egg, vanilla, salt, baking soda, and sugar.
Fold in flour, then stir in butter. If desired, add a dash of cinnamon.
Optional: Let sit up to 1 hour, until visibly bubbly from the action of the sourdough starter.
Your batter is now ready to make either pancakes or waffles!
Recipe Note
Variation 1: Savory waffles
Using the same recipe from above: Omit the vanilla and cinnamon, and mix in savory fillings like bacon, cheddar, peppers and green onions! Savory waffles are delicious as an alternative to bread or biscuits, alongside soups and chili, or just by themselves to mix up your breakfast routine.
